The game allows for two kinds of grab releases: defaut release and jump release.
This choice can be made wether your opponent just willingly doesn’t throw you, if a clash happens between two grabs, or when you break a pummel or spummel.
But it turns out that not all pummel break are the same, some allowing you to hold up to jump release, and other not.
I’ve tried and labbed every pummel break to document which one allow for a jump and which one do not, and there doesn’t seem to be any logic? Some pummel animations might justify it (such as lox spummel), but even there I don’t think it’s warranted to remove the option to jump release.
I’ve made a clip of maypul spummel break allowing jump, and clairen’s not doing so.
From my testing:
Is jump release possible after breaking their normal pummel [n] or special pummel [s] ?

P.S. I’ve documented pummel breaks, but maybe the same differences arise in grab clashes, grab time outs, and regrab preventions ?
